Hey guys and welcome to our new Blog Section: Cooking with Esther and Sofia. We just moved in our new flat together and decided to let you be part of our daily cooking adventure! So if we experiment on something new, you´ll be the first to see and redo it. We hope you guys like it! Let us know, if we inspired you to get out of your comfort zone and made you try something new. It´s christmas time already, so why not start our cooking Blog with simple christmas cookies you can easily do in 30 minutes. If you know Jamy Olivers` 15 minute recipes, you know 30 minutes means absolute cooking time without preparation. I do not know how long it takes you to weigh sugar and separate eggs, but we do it next to singing and dancing in the kitchen, so you can do it probably in half the time we do it 🙂
Today we did 3 types of cookies: vegan and chocolate cookies and vanilla-flavored crescent cookies. You`ll love them!
Vanilla Cookies – what you need:
- 300g flour
- 250g butter
- 90g powdered sugar
- 140g grinded almonds
- lace some rum
- and add a hint of salt
Mix all the ingredients together, form the cookies, put it in the oven at 180-200 degrees and leave it there for 10 til 15 minutes. When they get a touch of brown, they are ready and the only thing missing is some sugar at the top. It is as simple as that!
We also thought of making some vegan cookies, because a friend of ours is vegan and if I would be vegan (well, this will never happen – but let´s just pretend it would be so), I would be very happy if friends made this lovely gesture and make me some eatable cookies. They don´t even taste that bad.. No just kidding, of course they taste as well like christmas 🙂
What do we need? > you´ll get about 10-15 cookies
- a big, very ripe banana
- 8 dried dates
- 150g oak flakes
- 100g grinded almonds
– optional you can add:
- 1/2 teaspoonful of cinnamon
- vegan chocolate
Our first step now is to cut the dates in small pieces, pulp the banana and mix this two ingredients, until you get a more or less homogenous mass. Small pieces are not a problem. Add the almonds and oak flakes, knead all the ingredients until you get a smooth dough. Prepare the oven (180 / 10-15 minutes), form small, flat balls and they are ready for the heat. Enjoy!
And last but not least we made some in chocolate dipped cookies, the classic model among cookies 🙂
For these you need:
- 75g sugar
- 125g butter
- 2 packs vanilla sugar
- 250g flour
- 1 egg
Mix all the ingredients until you get a smooth dough and put it in the fridge for about an hour. Then the dough is ready to be rolled out and you can cut or press out some sweet cookie forms. We made pigs, fish, dogs and cows. These were the only ones´ we had in our new flat. Now we have a lot of christmas fish and pigs. At least they are yummy 😀
